Easy At Home Lunch Ideas For Adults Trying To Eat Healthy (but are tired of salads!)
There’s only so many salads we can eat, right? Now don’t get me wrong – I LOVE me a good ol’ salad! But I’m an adult so it’s time to explore OTHER healthy lunch ideas for home – something different is always a good thing, right?
I’ve found some fabulous lunch recipes that are all on the healthier side – and my goodness, they are GOOD! I look forward to lunchtime all day long now haha!

I can’t count how many salads I’ve eaten over the years for my “go to” at home lunch. So when I decided to explore OTHER options I ended up discovering one of my new favorite healthy lunches.
It’s called a Mediterranean Veggie Sandwich…. but now that I think about it, it’s kinda like a salad but on whole wheat bread haha!
Either way, it’s really good and darn pretty to look at:
Super simple to throw together, too!
Just grab some Dave’s Bread and spread with hummus.
Then throw on some cucumber or zucchini, tomatoes, bell pepper, carrots, onion, spinach, basil leaves, Feta cheese, olives…. heck, whatever YOU want on it.
It’s really yummy – and fast to make when you have the things you want on it.
I’m also ALL about the Adult Lunchables – I just prep a bunch each week and keep them in the fridge to grab and eat each afternoon.
They’re also REALLY handy to take a lunch WITH you!
But now I’m ready to REALLY get adventurous beyond my salad sandwich – yay me!
