26 Protein Packed Casserole Meals To Make Ahead And Freeze
Having freezer to oven meals ready to reheat is one of my favorite ways to meal prep! Especially the individual bowl-sized casseroles that I can just pop in the microwave!
And that’s exactly what the healthy recipes below are – high protein, healthy and quick to prep casseroles for family meals, for two – or grab and go easy individual meals.

One of my “go to” high protein freezer meals are these chicken burrito bowls – not only are they yummy and grab and reheat easy – I also make the whole thing in my crockpot.
Just dump the ingredients – let the slow cooker do the cooking FOR you – then split into individual freezer meal prep containers.
Ingredients:
- 5lbs boneless skinless chicken breast
- 4 cans kidney beans
- 2 cans Rotel
- 2 cans corn
- 2 packets taco seasoning
- 2 packets ranch seasoning
- 1 cup jalapeno slices with some juice
Directions:
Layer the ingredients above in your slow cooker with beans first, then corn, then chicken, then pour the Rotel and jalapenos, then your seasoning packets on top.
Give it a good stir in the crock and cook on LOW for 8 hours.
When it’s done, shred up the chicken some and split into your freezer containers – and freeze.
You might think it’s too “soupy”, but once you give it a good mix that shredded chicken absorbs a lot.
Plus you need extra liquid so it doesn’t dry out when reheating in the microwave.
When you’re ready to eat, just grab one out of the freezer and pop in the microwave for about 8 minutes – so simple!
(note: I do NOT take the lid off completely when reheating – I open it just enough to let any steam escape.
